HAVLÍKÚV DVŮR FARM
The farm Havlíkův dvůr is located in the village of Osek near Sobotka in the Bohemian Paradise . We deal with both plant and animal production. At the beginning of Angus beef breeding on our farm, it was one summer evening in 2014. We were grilling steaks. The quality of the not-so-cheap meat was very bad and we jokingly started planning...we told ourselves that we would only be satisfied if we produced the meat ourselves and had full control over the whole process. Well, the joke became reality. In less than a year, 25 beautiful black Angus cows grazed on our meadows. Today we have about 110 animals, our own breeding and we slaughter at least two animals every month. We are already enjoying the summer barbecue to our full satisfaction, the quality of the meat is simply great.
The farm produces Aberdeen Angus beef, which after slaughter is aged in quarters in newly built boxes with modern cooling and humidity control technology. Aging takes place for a minimum of 21 days under carefully controlled conditions, at a temperature of 0-2°C and a humidity of up to 70%. Aging supports the typical tenderness of Angus meat. After breaking down the individual types of meat, we wrap them in vacuum foil in a kitchen preparation, which guarantees durability and maintains juiciness. If the customer orders meat from our range before cutting, we will vacuum-pack the portions according to his wishes.
